Roasted Beets – Serves 4 | DINNER

Ingredients:
- 1 lb fresh beets
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp cumin
Directions:
Peel and slice beets into wedges and toss with olive oil, salt, and cumin. Arrange in a single layer on a cookie sheet lined with baking paper. Bake at 350 for 30-45 minutes. Smaller beets will cook faster than larger ones.
